Ready for Kick-Off – Super Bowl Weekend Special

Green Bay 2010Once again it’s time for the Super Bowl. From coast to coast and border to border, people will gather for the big game. Some are die-hard football fans while others are just eager to check out the commercials.

It wouldn’t be a Super Bowl without a rowdy crowd of friends and family, a few beers and fabulous food. What’s on your Super Bowl Sunday menu? Looking for a little inspiration? A few ideas?

Here goes!

Need dips? Start your party with a little Italian flair? Try my Roasted Caponata and White Bean Dip.

Or how about those football party classics? … Guacamole and Salsa!

Guacamole

2 ripe avocados, peeled, seeded and cut into large chunks
2 tablespoons fresh lime juice
3-4 grape tomatoes, chopped
1 tablespoon red onion, finely chopped
1 tablespoon yellow bell pepper, finely chopped
1 clove garlic, minced
Kosher salt and freshly ground pepper to taste
1/2 teaspoon cumin
Pinch cayenne pepper
2 tablespoon cilantro, finely chopped
2-3 tablespoons sour cream

Put the avocado and lime juice in a small bowl, mash with a fork. Add the tomatoes, onion, garlic, bell pepper, cumin, salt, cayenne and cilantro. Whisk with a fork to combine. Add the sour cream and combine.

Simply Delicious Salsa

1 pint grape tomatoes, chopped
1 teaspoon (or more to taste) jalapeno pepper, minced
1/2 small red onion, finely chopped
2 cloves garlic, minced
1/2 yellow bell pepper, finely chopped
1 tablespoon fresh lime juice or red wine vinegar
1 tablespoon olive oil
Kosher salt and freshly ground pepper to taste
1 tablespoon cilantro, finely chopped

Combine all ingredients.

And don’t forget the Hoisin Chicken Wings.

By half time, maybe before, you’ll be ready for the main event. How about My Favorite Chicken & Black Beans Chili or My Other Favorite Chicken & Black Beans Chili. Had enough chicken? Try my Tex-Mex Braised Beef, Black Beans & Fresh Corn. And yes, to answer the obvious, I much prefer black beans to pinto or kidney!

Serve it up with a Leafy Salad or Crunchy Slaw .

And top it off with Triple Threat Brownies.
