Weekend Special – Spring Has Almost Sprung – Light Bright Seafood Dinners

Woot! Woot! Woot! It’s a triple header!

It’s still light at 7:00 (cocktails on the beach anyone), there will be a Super Full Moon on Saturday night and Sunday is the first day of spring. Not to mention, the skiing is still great! (It may be spring but there is still a pile of snow on the mountain and in my yard.) Sounds like a great excuse to celebrate. Why not bring friends together for a taste and celebration of early spring?

Here are a few suggestions for a festive early spring dinner:

Start with a taste of Sicily: For a taste of pure sunshine, try my Caponata. Pile it high on slices of warm country bread.

The Main Event: How about Seared Salmon (without the lentils) with my favorite Roasted Asparagus & Walnuts and Orzo with Feta to put you in the mood for spring?

Or maybe you have a craving for artichokes? Try my Linguine with Lemon Braised Artichokes topped with a few Mediterranean Shrimp

Something Sweet: What could be better than a sunny Lemon Tart. It’s the perfect finish to your Welcome Spring! celebration.

Orzo with Feta
Serves 8

1-2 tablespoon extra-virgin olive oil
Juice of 1/2 lemon
1 clove garlic, minced
1 tablespoon finely chopped mint
1 tablespoon finely chopped parsley
8 ounces orzo pasta
Grated zest of 1 lemon
2-3 ounces feta, crumbled
Kosher salt and freshly ground pepper, to taste

Combine the olive oil, lemon juice, garlic and herbs in a small bowl and let sit while you boil the water and cook the pasta.

Cook the pasta in boiling salted water, according to package directions. Drain and return to the pot.

Add the olive oil mixture to the orzo and toss to combine. sprinkle with the lemon zest and feta and toss to combine.
