Weekend Special – A Taste of Provence!

The sky is blue. The air is warming up. There is still a heck of a lot of snow in my yard but it is melting. The first crocuses have poked their little faces out to enjoy the sun. Yahoo! Spring is really truly here. I’m Sooo Excited!

Celebrate the season with friends and family. Take a long walk or bike ride in the sun. Check out the beach and visit your kayak. And at the end of the day, cook up a yummy dinner from the sunny south of France!

To Start: No question. You must make up a batch of Tapenade. Serve it with fresh vegetables for a light, bright start.

The Main Event: One of my favorite, go-to springtime dishes is
Chicken Provencal. A little garlic, a hint of anchovy, capers and olives in a lovely tomato sauce. Serve it with sautéed spinach.

Don’t forget the salad and cheese: The French usually eat salad after the main course, often with cheese. Make a simple salade verte (green salad) with a Classic French Vinaigrette. Make it all the more special with Goat Cheese Croutons.

Something Sweet: Top off your feast with … what else but Chocolate Mousse or my favorite spring dessert – Tart Citron.

Goat Cheese Croutons
Makes about 12 pieces

1 loaf ciabatta bread, sliced – ask the bakery to slice it for you
2 ounces (1 stick) butter
5-6 ounces soft goat cheese, at room temperature
1-2 tablespoons heavy cream

Preheat the oven to 375 degrees.

Put the goat cheese and cream in a small bowl. Use a fork to mash the goat cheese and combine it with the cream. Stir until the goat cheese is smooth and spreadable, adding a little more cream if necessary.

Lightly butter one side of each slice of bread. Spread a thick layer of goat cheese onto the other side.

Bake at 375 degrees until the buttered side of the bread is golden brown and the cheese is piping hot, 10-15 minutes.
