Weekend Special – Picnic On the Beach

… in the park, a grassy meadow or on a mountain top!



When the weather turns warm, I want to spend as much time as I can outdoors.  A picnic is a great way to celebrate summer and enjoy the sunset.

Here are a few ideas!



To Start:
Nibble on bruschetta with my Feta & Walnut Spread and/or Peperonata topped with a little crumbled gorgonzola.

The Main Event:
What could be better than a cool salad? Try my simply elegant Lobster Salad with Lemon-Tarragon Vinaigrette. (Not a fan of tarragon? Substitute basil!) Complete your menu with a nutty Wheat Berry Salad and a few mixed greens tossed with a Classic Vinaigrette.

Or maybe you’d prefer Chicken Salad. I like to toss bite-sized pieces of chicken, chopped cucumber and thinly sliced scallion with a little Sun-dried Tomato Aioli. Next I mix up a garden salad of greens and lots of fresh and yummy veggies and toss it with my Sun-Dried Tomato VinaigretteThen I add a spoonful or two of Couscous Salad to complete the meal.

Sweet Finale:
Local strawberries are here or soon will be. It’s time to pick-your-own and turn them into a fabulous dessert! I love to dip them in White Chocolate Lavender Cream or top them with Mascarpone Cream.

Strawberries with Mascarpone Cream
4 servings

1 pound fresh strawberries, quartered
Juice of 1 half orange
1-2 tablespoons Grand Marnier (optional)
1-2 tablespoons honey
Mascarpone cream (recipe follows)

Combine the strawberries, orange juice, honey and Grand Marnier. Let sit for a few minutes to release the strawberries’ natural juices. (You can prepare the strawberries a few hours in advance and keep chilled until you’re ready to serve. Don’t leave them too long or they will get mushy.)

Spoon the strawberries into dessert bowls or glasses. Top with a dollop of mascarpone cream and serve.

Mascarpone Cream
4 ounces mascarpone or cream cheese
1 cup very cold heavy cream
1-2 tablespoons honey
Grated peel of 1/2 orange
Juice of 1/2 orange

Put the mascarpone, honey, orange juice and orange peel in a large mixing bowl, combine with an electric mixer and beat until smooth. Add the heavy cream, whip until the cream forms soft peaks. (It’s okay to whip up the Mascarpone Cream early in the day.)
