In the Kitchen … Or Not

In the infamous words of Harry S. Truman,

                          If you can’t stand the heat, get out of the kitchen.

It’s that kind of week. Sweltering hot, it is definitely a week to stay out of the kitchen. It is the perfect time to turn a salad into a one-dish meal. Toss up a big bowl of crispy veggies and top with leftover chicken, steak or shrimp. Two of my favorite one-dish summertime dinners are Thai Salad and Corn & Tomato Salad. I like the Thai Salad with shrimp and the Corn and Tomato Salad topped with chicken – but that’s just me.

Whatever you do, take dinner outside on the deck or to beach. Enjoy!

  1. My favorite summer salad is: Kidney Bean Salad
    My mother-in-law used to bring this to family gatherings.

    2 cans Progresso Red Kidney Beans (I use 3 smaller cans of store brand, dark or regular is fine) Drain, but don’t rinse.
    1 jar Howard’s Sweet Pepper Relish
    1 Tbsp minced onion
    1 Tbsp minced celery
    3 heaping Tbsp Miracle Whip or mayo
    1 tsp Worcestershire Sauce

    Mix all together and refridgerate a couple hours or overnight.
    Serve with Keebler Buttercrisp or Ritz crackers.

    Adjust celery and onion to your liking. I like a bit more celery!

    Very nice snack or healthy, light, summertime meal. Just pull out of the refridgerator and eat!
