Weekend Special – Cocktails on the Beach

It’s summertime and the living is easy. It’s time to ease into the day slowly with an extra cup of coffee. It’s time to spend long, lazy evenings on the beach or on the deck with a glass of wine and a few nibblies. Maybe even skip dinner altogether in favor of some tasty tapas!

The sun is setting a little earlier everyday so it’s time to capture every minute of summer’s fun, beauty and tranquility.

whether you pot-luck it or host the party – here are a few ideas!

You can’t go wrong with a great piece of really good cheese. However, if you want to get a little fancy you might want to try my Crostini with Goat Cheese, Roasted Tomatoes & Olives. I always like to have a few nuts and olives on hand.

For a bit of heartier fare, breakout the grill and cook up some Spicy Hosin Chicken Wings grill. Then again, I’m also partial to Caponata, a Sicilian specialty which is both delicious and versatile. Of course, you can always fall back on my Mediterranean Shrimp. Cook them at home early in the day, refrigerate and then bring to room temperature to serve.
