Weekend Special – Gone Fishin’

Can’t decide what to cook this weekend? There’s a full moon on Saturday and the weatherman promises good weather. Sounds like a great weekend to get out the grill and enjoy a beautiful piece of fish. Dress it up with a little aioli, salsa or caponata.

Ease into the evening  with a nice glass of white wine. Keep the hors d’oeuvres simple. Nibble some really good Parmigiano-Reggiano or Pecorino Romano cheese. Enjoy a dab of Tapenade on a cool, crisp cucumber or crunchy flatbread cracker.

When you’re ready for the Main Event, you can’t go wrong with a great piece of perfectly Grilled Salmon with Lemon-Basil Aioli. For a nice change, serve it with Wheat Berry Salad. Or maybe you’re looking forward to Grilled Swordfish with Roasted Caponata.

(Oh and by the way … unfortunately, the weatherman is forecasting a cold and rainy Sunday. A bowl of Caribbean Fish Stew sounds like good bet for the backside of the weekend.)

And for dessert? Blueberries are in season and a traditional Blueberry Pie will be the perfect ending to the perfect evening.
