A few cold nights and voila – the trees are brilliant in red and gold.
Let’s just hope the weatherman’s got it right and the rain clears in time for the weekend. Rainy or bright, it seems like a good weekend to get out your soup kettle.
Here are a few yummy soups to think about for the weekend. You might even cook one up!
Local corn is still available at my local farm stand … perfect for Chicken & Corn Chowder. For a cornier chowder, make it with corn stock.
For a taste of Italy, maybe you’d like to try Tuscan White Bean Soup or Raviolis in Broth with Meatballs & Escarole.
And then there are my favorite fall soups. You can’t beat Roasted Butternut Squash Soup, Wild Mushroom Soup or Soupe au Pistou.
While the soup is bubbling, sip a mug of Hot Mulled Cider, with or without a shot of rum or apple jack.
For an easy supper, add a great salad: Maybe you’ll try something crunchy like Caesar or Fennel and Feta. Then again, you might like a mix of sweet and savory with Mixed Greens with Roasted Grapes.
A loaf of great bread and maybe a wedge of cheese is all you need to complete your souper supper. Unless you want to end on a sweet note!
For a Sweet Finish: Peanut Butter Brownies are a favorite with kids but Apple Crisp or Apple Crumb Cake is more in keeping with the season.
