This Weekend’s Special – Throw Some Chicken on the Grill

And it is with an enormous and thankful sign that we great the break in the weather. The weekend promises warm sunshine without the oppressive humidity. It’s a good weekend to heat up the grill and throw on some chicken.

Here are a few ideas for a delicious cookout with family and friends:

Relax with a beer, Shandy or a glass of wine. Set out some Roasted Almonds to nibble and sip Gazpacho shots.

Then it’s on to the grill: when it comes to chicken, my favorite marinades include a spicy tomato-based BBQ sauce, an Indian-inspired tandoori and a white wine, mustard and herb marinade. Take your pick, they are all yummy. If you’ve got a big crowd, cook boneless breast of chicken. Unlike chicken on the bone, it only takes a few minutes.

Keep the evening traditional by adding some Slaw and Potato Salad. Or whip up a Wheat Berry Salad for a change!

End on a sweet note: I think cupcakes would be fun! Carrot Cupcakes or Chocolate, Coconut or Lemon. I’m betting any or all would be terrific. Unless of course you can get someone to whip you up a s’more.

Have a wonderful weekend! Bon appétit!

  1. Love your easy gazpacho!! I’ve made this 3 times this summer and it’s my favorite – love the cayenne pepper kick it has. Your recipes are great :))
