The holiday party season is in full swing with cocktail parties, open houses and cookie swaps. With all the holiday hustle and bustle it’s nice to take an evening to relax with close friends and family. Not a cast of thousands, just a few special people in front of the fire and around the table.
Keep it simple. For a quiet dinner with your nearest and dearest, you don’t need to serve a plethora of fancy hors d’oeuvres. A nice glass of wine, some thinly sliced prosciutto or artisanal sausage, a few nuts and an olive or two work for me.
While you relax and reconnect in front of the fire, let a beautiful chicken roast to perfection in the oven. A Roast Chicken is one of the easiest dishes to prepare … season it, throw it in the oven and except for a quick baste from time to time, forget about it for a couple of hours. If you want to be ever so continental, serve salad after the main course. Otherwise, enjoy it before the chicken. Try a lovely salad of mixed greens with Sundried Tomato Vinaigrette. For a special touch, add a Crostini with Asparagus, Goat Cheese & Sundried Tomato Pesto (asparagus optional) to each plate. Delicious!
