Weekend Special – It’s (Après) Ski Season

skiing_headwall_RaggedWhat are your plans for the weekend? A little skiing in the sunshine? Or a snowshoe adventure in the woods? However you spend the day, why not invite everyone back home with you for a cozy après ski dinner?

Here’s an idea or two to get you started!

Relax by the fire while an Old Fashioned Yankee Pot Roast bubbles in the oven. Pass around mugs of Hot Mulled Cider to warm everyone up. For nibbles, try Feta & Walnuts or Baba Ganoush with warm pita chips or a few fresh veggies.

When you are ready to gather around the table, start with a salad. Try my Mixed Greens with Roasted Grapes or toss mixed baby greens with Garlic-Shallot Vinaigrette and a sprinkle of crumbled Gorgonzola and toasted walnuts.

When it comes to the main course, enjoy the pot roast with a baked sweet potato. (Don’t forget to pop them in the oven while the pot roast is braising. If you have two ovens, cook them at 400 degrees for 45 minutes to an hour. If you have only one, stick them in the oven with the pot roast and cook at 350 degrees for about 1 1/2 hours. Just make sure you poke them a few times with a sharp knife before baking – otherwise, they might explode. Do not lay the sweet potatoes directly on the oven rack or you will end up with a sticky mess. Lay down a sheet of foil and place the sweet potatoes on the foil.)

How about something warm and cozy for dessert? I’m thinking a Rustic Apple Tart sounds good. Or maybe Bananas Foster. Yum!

Whether you ski, snowshoe or enjoy a lazy day at home … have a delicious après-ski party and bon appétit!

    Thanks for the reminder about how good pot roast is – we will cook it this weekend! I just did the rustic apple tart over the holidays and served with ginger/vanilla ice cream, to die for. Hi from Ragged!



    • Barb – Thanks for stopping by. I made the pot roast last weekend – it was wonderful! I’m doing my snow and sun dances and hoping it doesn’t rain. Would like to ski tomorrow – but not in the fog and drizzle. Take care – Susan
