What’s Cooking This Thanksgiving?

Turkey_01With the big feast just around the corner, everyone is asking, “What are you cooking for Thanksgiving?”

Albeit subject to change …
… here’s my plan:

Dad’s Shrimp Cocktail
Roasted Almonds
and Spicy Olives

Roasted Butternut Squash Soup

Roast Turkey with Mom’s Stuffing and Giblet Gravy
Cranberry Sauce
Broccoli Purée
Smashed Potatoes
Garden Salad (courtesy of my sister Brenda)

Pumpkin Cheesecake

Have a wonderful Thanksgiving and bon appétit!

Dad’s Shrimp Cocktail

3/4 cup ketchup
1 small dollop drained horseradish
Juice of 1/4 lime
3-4 per great big (16/20 per pound) shrimp person, peeled and de-veined

Make the cocktail sauce: put the ketchup, horseradish and lime juice in a small bowl and stir to combine.

Arrange the shrimp on a large platter and serve with the cocktail sauce.

Since he never adds enough horseradish at least one of his kids or grandkids will stir in a second, more generous dollop of horseradish.
