Spring Has Sprung Weekend Special – Time for Tapas

Daffodils_VaseThere may be snow on the ground but yesterday was the first day of spring. In the spirit of spring, it’s time for tapas. Whether you want to gather a big crowd or just a few friends, spend a relaxing evening nibbling and sipping.

Here are a few ideas for nibbling:

Pancakes are anything but ordinary with my Zucchini Pancakes or Savory Blinis.

Who doesn’t love mushrooms? How about Greek Stuffed Mushrooms or Mushroom Crostini.

Speaking of crostini … try my Sweet Potato & Goat Cheese Crostini or Asparagus Crostini with Sun-dried Tomato Pesto & Goat Cheese.

And shrimp, you must have shrimp. Maybe my Roasted Shrimp with Tarragon Aioli or, a bit more exotic, Lettuce Cups with Shrimp & Noodles.

If you are like me, you’ll probably want something green. So how about some Fresh Veggies with Roasted Pepper Dip or White Bean Hummus.

And for sipping?

There is always your favorite wine but how about something sparkly?

There’s always a Bellini or Kir Royale but maybe you’d like to try a Berry Berry Fizz.

Berry Berry Fizz
Makes  enough blackberry for 8 cocktails

About 2 pounds frozen blackberries, thawed but very cold
Framboise
Chilled Prosecco sparkling wine

Puree the blackberries in a blender until very smooth. Strain through a fine-mesh sieve into a bowl and discard the seeds. Cover and refrigerate until ready to serve.

To serve: pour about 1 ounce blackberry puree into a champagne flute, add 1-2 tablespoons Framboise and top with Prosecco. Serve immediately.

And finally, end the evening with something sweet:Who doesn’t love a cookie!?! Try my Cherry-Pistachio Biscotti, Pecan Balls and/or Ginger Shortbread.

And if all this seems like too much cooking, baking and mixing … turn it a Tapas Potluck. Let everyone bring a dish, bottle of wine or cocktail.

  1. I checked out your Lettuce Cups with Shrimp & Noodles recipe. My goodness that does look & sound delicious. Thank you for sharing your recipe. I have not celebrated spring yet. I am going out for a late breakfast today and then off to do some shopping. I hope you have a wonderful weekend.

    • Thanks Mary. I welcomed spring with on the slopes. Unfortunately, without the sun cooperating. Instead, it snowed … just long enough to drive me off the slopes. Home again and chilled to the bone. Enjoy the weekend – Susan
