June is the month for graduations, weddings and, oh yah, Father’s Day. regardless of the reason, families and friends get together for special celebrations and festive feasts. My niece is graduating Friday night. How about you? What’s happening at your house this weekend?
Whatever the occasion make it special with a great party and wonderful food. Keep it casual and everyone, even the cook, will have a great time!
Here are a few ideas!
Enjoy a glass of wine or a beer while you nibble on some great treats. Make up a few dips and spreads a head of time for an easy start to the evening. Baba Ganoush, Feta & Walnut Spread and Roasted Red Pepper Dip are all good choices. Serve them with fresh veggies and pita chips. Add some Rosemary Cashews
and Spicy Olives.
Set up a buffet table for the main events. For salads, try Asparagus & Radish Salad, a festive Red & Green Salad,Couscous with Dried Fruit & Pine Nuts and New Potato Salad Dijon.I’m doing my sun dance and hoping the weather is with us. Unless it’s pouring, I’ll get out the grill. If you’re seafood fans, try my Piri Piri Shrimp or Grilled Swordfish with Olive & Caper Salsa. Not wild about fish and shrimp? How about Grilled Lamb Chops with Lemon-Mint Yogurt Sauce or Grilled Rib Eye with Compound Butter.
Finish the evening with everyone’s favorite make-your-own sundaes. Get some great ice cream or gelato and make up some delicious Death by Chocolate Sauce and Orange Caramel Sauce. Then keep it simple or go wild with fun add-ins and sprinkle-ons. Toasted coconut and nuts (try my Sweet & Salty Pecans), chocolate chips or mini M&Ms, chopped candy bars (Heath bars are my favorite) … the list is as long or as short as you want to make it.
