Not exactly sure why but we’re celebrating the Fourth early on Pleasant Lake. We’re in for a fun-filled weekend starting with a Boat Parade on Saturday afternoon. The festivities continue when the sun goes down with Flares & Fireworks. On Sunday morning, I’ll be joining the Run/Walk for the Lake.
There will be lots of friends and family around, so … what to feed them all? I’m happy to share a few ideas!
A cookout of course! It’s an Independence Day tradition, even if the celebrations start a week early this year! Start with a few crispy veggies with Spicy Peanut-Sesame Dipping Sauce, Tapenade and/or Baba Ganoush. Add a few nuts and a festive cocktail or two.
Ready for the main course? At least in New England, salmon and peas are a Fourth of July classic. I think I’ll wait until next week for salmon. For our fireworks celebration, I’m thinking Piri Piri Shrimp would be nice and spicy. Unless you’d prefer Tandoori Chicken. Serve the shrimp and/or chicken with a few great salads. Asian Slaw and Asian Noodles are both good choices.
And for a sweet finish, why not churn up some homemade gelato? Make it red, white and blue with my Strawberry Gelato, Brown Sugar Yogurt Gelato
and Blueberry Gelato. Or try my Sour Cream Cupcakes with White Chocolate-Cream Cheese Frosting. Give them a patriotic look by dividing the frosting in thirds. Dye one-third red, another third blue and leave one plain. A few colorful sprinkles or mini flags will add to the fun.
