My niece who lives in California is here this weekend with one of her sons. We only see them once a year so we are very happy. And happy to cook for them. Our menu is still a little up in the air but here are a few thoughts for a festive, summer dinner for family and friends.
Relax and take it easy. Sip some wine and nibble fresh cucumbers with a dab of Smoked Salmon Mousse. It’s a great combination. Or maybe you’d prefer, Summer Rolls. They are a bit of work but definitely worth it!
On to the main event … Swordfish is a family favorite. So how about Grilled Swordfish with Tequila-Lime Butter or maybe Grilled Swordfish with Olive-Caper Salsa. Serve it with a delicious Orzo Salad with Lemony-Pesto & Grilled Tomatoes and a big bowl of mixed baby greens with a Classic Vinaigrette.
And for dessert … fresh, local blueberries are ripe for the picking. Perhaps you’d like to try my dad’s favorite, Blueberry Pie or a crowd friendly Blueberry Crisp. Perfect with a scoop of vanilla ice cream.
