We head into the long, holiday weekend with a promise of sun and mild temperatures. Yippee! You can’t beat New Hampshire in the fall. It will be a busy weekend all across the state. There’s the Fall Foliage Festival down in Warner, a Pumpkin Festival in Milford and more festivities at Strawbery Banke in Portsmouth. The summer people will be back in the neighborhood. They’ll be busy pulling boats, docks and rafts out the lake, putting the garden to bed and emptying their refrigerators. They’ll be back at Thanksgiving or Christmas or both but until that it will be pretty quiet around the lake.
Whether you are home, or lakeside, you can’t work the entire weekend. Take some time to enjoy the foliage and have some fun. What will you be cooking this weekend? In honor of Columbus, how about a hearty Italian feast. Here are a few ideas:
Start with crostini! With so many great choices … what to choose? How about my Artichoke Crostini or Mushroom Crostini. Pop open a bottle of Prosecco, put your feet up and nibble to your heart’s content.
When you are ready to gather around the table, start with a delicious salad. The tomato season is speeding to an end. Before it is over try my Heirloom Tomatoes with Balsamic Reduction or Insalata Caprese. Or think autumn and enjoy my Mixed Greens with Warm Roasted Squash.
For the main event, the classics never fail. If you have a big crowd, there is nothing like my Four Cheese Lasagna Bolognese with Spinach. My Chicken Parmigiana with Spaghetti Marinara is another old time favorite. For an oh so cozy alternative, try my Chicken, Sausage & Bean Ragù.
