Have you started a thirty day challenge? If it has something to do with food, I hope the focus is on real food. To help you along, I’ve put together a tasty menu for the weekend.
How to start? Pour everyone a glass of wine and relax with a nibble or two. Keep it light with a few Rosemary Cashews or Roasted Almonds and Spicy Olives. Looking for something a bit more substantial to start? How about White Bean Hummus with fresh veggies.
On to the main course, think risotto with my Lemon Risotto with Spinach & Herbs. Top the rice with a couple of Roasted Shrimp (skip the aioli) or a slice of Roasted Salmon (with or without the Beurre Blanc – it’s up to you!) Not a seafood fan? The risotto is just as delicious with a perfectly roasted chicken.
