A Real Food Weekend Special

lots_of_30Have you started a thirty day challenge? If it has something to do with food, I hope the focus is on real food. To help you along, I’ve put together a tasty menu for the weekend.

How to start? Pour everyone a glass of wine and relax with a nibble or two. Keep it light with a few Rosemary Cashews or Roasted Almonds and Spicy Olives. Looking for something a bit more substantial to start? How about White Bean Hummus with fresh veggies.

Now, what about dinner? Start with a salad. Combine roasted vegetables with fresh greens. My two favorites are Roasted Beet Salad or Roasted Butternut Squash Salad.

On to the main course, think risotto with my Lemon Risotto with Spinach & Herbs. Top the rice with a couple of Roasted Shrimp (skip the aioli) or a slice of Roasted Salmon (with or without the Beurre Blanc – it’s up to you!) Not a seafood fan? The risotto is just as delicious with a perfectly roasted chicken.

Sound good? Now, what about dessert? Think sweet and homey with Maple Mousse with Apple Compote or my Rustic Apple Tart.
