What Happened to Spring? Weekend Special

crocus_snow_01Snow, yes SNOW, is in the forecast for Sunday morning or maybe Monday. Anyway, the weekend is not looking good. We had better do something (besides our income taxes) to cheer things up. You could go see a movie and top it off with dinner at a favorite restaurant. Or, you could invite friends around your table. Hmmm – what to serve?

Let’s start with a warm and toasty appetizer. You’ll love my Savory Galette with Spinach, Mushrooms & Manchego – give it a try! Alternatively, if you have not tried my Warm Gorgonzola with Caramelized Onions & Walnuts, now is the perfect time.

Now, to the table. Start with soup instead of salad on a rain- or snow-chilled evening. How about Tomato Soup? Top each mug a with Parmesan Crouton. Unless, you’d rather try my White Bean & Tomato Soup. Keep the servings small to save room for the main course. (and dessert).

What about that main course? I think Creole Shrimp with Cheesy Grits would be perfect. Not convinced? How about Chicken Niçoise with a spoonful of Whole Grain Pilaf.

End the evening with a sweet and cheerful treat. What could be better than a Mini Chocolate-Peanut Butter Whoopie Pies? No time to bake? Check the back of your refrigerator, with any luck you’ll have some Maple Sauce and Death by Chocolate Sauce for sundaes!
