  1. Just want to tell you how delicious the linguini with sun dried tomato pesto and roasted eggplant is! It’s a keeper. I used chopped sun dried tomatoes the 2nd time, was easier to process. Also added 1/2 tsp Sirracha sauce to the pesto. Making the pesto ahead is a help. I think this sauce would be great on…pork tenderloin or barbecued chicken?
