Fourteen Hundred & Ninety-two & Pasta with Pesto, Roasted Grape Tomatoes & Corn

As kids, we learned all about Christopher Columbus and his perilous voyage in 1492. Queen Isabella, along with the Niña, the Pinta and Santa María are entrenched in our psyches. Looking back, I might be tempted to think there was a little hanky-panky going on. The benevolent Izzy got a lot of coverage but there was next to no mention of King Ferdinand. That said; there was no mention of hanky-panky either. Then again, you can only share so much with second graders.

Anyway, throughout elementary school we cut galleons out of construction paper and studied maps of Columbus’ journey. As interesting as galleons and maps are, the best part was the day off from school. Why, we’d barely been back six weeks and already a mini vacation. A parade wound its way down Washington Street. My sister and her Girl Scout troupe marched in it one year. I must admit, I preferred jumping in a giant pile of leaves to standing in the cold watching Brenda and her friends parade by.

Come to think of it, it was also a good day to eat birthday cake.You see, my sister was born on Columbus Day. No, not the second Monday of October, that’s the let’s-have-a-long-weekend holiday and not the real thing. Brenda’s birthday was on the actual day Chris discovered America. Well, the actual day plus more than a few hundred years. Of course, CC thought he was in Asia. Columbus had the brilliant idea that the quickest route from Europe to Asia was a short sail west across the Atlantic. He didn’t figure on a bunch of islands, a couple of continents and another ocean standing between him and Japan.

Anyway, when I was in kindergarten, maybe first grade, Brenda tried to convince me that the holiday commemorated her birthday. I knew it wasn’t true but that didn’t stop me from having a double twinge of doubt and jealousy. I’ll also admit to feeling more than my fair share of vindication when the parade and the rest of the hoopla was moved to the second Monday of October.

All these years later and living in New Hampshire, the Columbus Day weekend is a reminder that cold weather is coming soon. Forget parades, it’s time to get my act together. Along with a quest for perfect pumpkin, I’d better take a stab at all those summer-is-over chores. (Is it okay if I just kind of start to think about taking a stab at them?)

Unless you are a weed-whacking aficionado, it’s not a fun list. There is a certain sadness to putting the kayak away, especially when I barely had a chance to use it. Perhaps if I wait another week or two, I’ll find the time for one last paddle. The same goes for the Adirondack chairs. Is it possible that a few hours will suddenly free up? It would be nice to sit in the sun with a good book. Thankfully I have (or hope I have) a few more weeks before the snow tires must go on the Mini.

Truth be told, I’d rather take a long walk and check out the foliage than clean out the garage. True or not, I’ve been assured that the brilliant reds and golds are just a few short days away. People come from miles to see our foliage. Shouldn’t we take some time to revel in the glorious color?

Speaking of color, my red kitchen is getting closer and closer to completion. The big stuff is done – floors, cabinets, countertops and appliances. All that’s left is a list of gnarly little odds and ends. Well, except for a second coat of paint for the walls and trim, that one’s neither odd nor little.

Anyone know a good painter? Bon appétit!

Pasta with Pesto, Roasted Grape Tomatoes & Corn
This dish combines pasta and pesto from Columbus’ native Genoa with tomatoes and corn from the new world. If you like, add a few roasted shrimp. After all, Genoa is a seaport. Enjoy!
Serves 8

1 pint grape or cherry tomatoes
Olive oil
Balsamic vinegar
Pinch or to taste red pepper flakes
Kosher salt and freshly ground pepper to taste
1/2 onion, finely chopped
1 clove garlic, minced
16 ounces gemelli, cellentari or your favorite short twisted pasta
About 1 cup (1-2 ears) fresh corn kernels
Pesto alla Genovese
Freshly grated Parmigiano-Reggiano cheese

Preheat the oven to 375 degrees.

Coat a large skillet with equal parts olive oil and vinegar, add the tomatoes, season with pepper flakes, salt and pepper and toss to combine.

Roast in the oven at 375 degrees for about 10 minutes. Add the onion, toss to combine and continue roasting for another 10 minutes. Add the garlic, toss and roast for a final 10 minutes or until the vegetables are soft and begin to brown.

While the tomatoes roasting, bring a pot of salted water to a boil. Add the pasta and cook according to package directions.

Reserving a little pasta water, drain the pasta and return to the pot. Add the tomatoes, corn and about 1/4 cup pasta water and toss to combine. If the pasta seems dry, add a little more pasta water. Cover and simmer on low for 1 minute.

Add a dollop or two of Pesto alla Genovese to the pasta and toss to combine. Transfer the pasta to a deep platter or individual shallow bowls. Serve immediately with a sprinkle of freshly grated Parmigiano-Reggiano cheese.

Pesto alla Genovese
Makes about 1 cup

4 cups fresh basil leaves
1/4 cup pine nuts, toasted
4 cloves garlic
1 teaspoon kosher salt
1/3 cup plus more to cover extra virgin olive oil
1/4 cup freshly grated Parmigiano-Reggiano cheese
1/4 cup freshly grated Pecorino Romano cheese

Put half of the basil, the pine nuts, garlic and salt in a food processor and pulse to chop and combine. Add the remaining basil and 1/3 cup olive oil and process until smooth. Add the cheeses and pulse to combine.

Transfer to a small bowl or jar, pour a thin layer of olive oil on top of the pesto, cover and refrigerate for at least an hour to combine the flavors.

Pour a thin layer of olive oil on top of leftover pesto, cover and store in the refrigerator.

You might like to make a big batch and store in small containers in the freezer. Making pesto is a lot more fun than weed-whacking.

Columbus Day Weekend Special

pleasant_lake_fall_04The long holiday weekend is upon us. The neighborhood is starting to fill up with summer people. The street and lake will hum with activity. My part-time neighbors will spend a few last days in paradise before heading south again. Beach chairs, kayaks and life jackets will be stowed and one last hike in the hills will be enjoyed. With sunshine, brilliant foliage and blue sky, it is a great time to enjoy life. After all, Columbus Day has strong ties to the Italian-American community. When I think of Italians, I can’t help but think of la dolce vita, the good life.

Here are a few ideas for a dolce vita harvest dinner:

Start with a beautiful antipasto platter. Set out some beautiful cheeses with a basket of tasty, artisanal crackers. Next, add some delicious Artichoke Pesto, Tapenade, Chicken Liver Pâté and/or Caponata for a delicious start to your feast.

Now to the table for a light and bright salad. Maybe you’d like to try my Radicchio, Fennel, and Arugula Salad or Lemony Kale & Radicchio Salad. Now for the main course – pasta of course! What to suggest? How about Ravioli with Roasted Butternut Squash, Italian Chicken Stew with Penne or Fettuccine with Fresh Corn & Tomatoes?

Now, what’s for dessert? Everyone loves a classic. For that you can’t beat Cardamom Plum Tort or Tiramisu.

Columbus Day Weekend & Cardamom Plum Tort

Elkins_Dam_Foliage_02The Columbus Day weekend is just days away. Although Columbus Day is a federal holiday, less than half the states celebrate and many companies treat it like any other Monday. As far as I can figure, Columbus Day has lost some of its luster. I could be wrong but the holiday seems to have regressed into not much more than a good excuse to buy a cheap mattress or shoes at a big discount.

Whoa bucko, let’s be careful there. Let’s not go disparaging Columbus Day. That goes double if your company gives you the day off or you’re married to an Italian. Columbus Day was a hard fought holiday. Although it was first celebrated in 1792, Columbus Day did not become a federal holiday until 1937. President Roosevelt’s proclamation was largely due to the tireless lobbying of the Knights of Columbus and Italian-Americans.

Admittedly, Columbus Day is fraught with controversy. From all or at least most accounts, Columbus was a nasty guy. His treatment of the indigenous people he met in the Caribbean as well as his crew was atrocious. Many cities and even a few states have changed the name and focus of the holiday to Indigenous Peoples Day, Native American Day or Discovery Day. I’m good with that. Let’s settle this controversy quick because early to mid-October is a wonderful time for a long weekend.

For one thing, it’s still warm or at least warmish. Whether you want to march in or watch a parade, go for a marathon bike ride or visit a pumpkin patch, you can do it without dressing up like the Michelin man. For another, the leaves are starting to turn. No one but no one does fall foliage like New Hampshire.

Of course this year, we’ll have to contend with more than a few politicians making the rounds. With the election just weeks away, they’ll be at parades and harvest festivals. One or two might even show up in a pumpkin patch. I doubt any will make the mistake of checking out a corn maze. There’s too much at stake to risk the indignity of getting lost in a field of corn. Instead, the pols will be offering up sound bites, shaking hands and kissing babies. Let’s hope that the endless grind of campaigning doesn’t get the better of them. Heaven forbid someone starts biting hands and shaking babies.

For anyone living in New Hampshire, Columbus Day is a reminder that cold weather is coming and coming soon. As a midpoint between Labor Day and Thanksgiving, it is a good time to get your fall To-Do list together. Besides tracking down pumpkins, it’s not a bad idea to put the kayak away, run the weed-wacker around the garden and maybe plant some bulbs. While the long weekend is not a hard and fast deadline for these chores, I suspect we are all starting to feel the looming threat of an early snowfall. Those first flakes may not be hours or days away but the state is famous for Halloween ice and snow.

Regardless of how you spend the day, biking, weed-wacking or shopping, you’ll want to end it with a great meal. Both the holiday and the harvest can inspire you. Let your taste buds travel around the world and back again. After all, Columbus was from Italy and he was trying to get to the Far East when he landed in the Bahamas. Take your pick of any of these great cuisines or mix it up.

Cardamom Plum Tort
This melting pot dessert combines plums from Italy and cardamom from India. Enjoy!
Serves 8

Butter and flour for the pan
1 cup unbleached flour
1 teaspoon baking powder
1 teaspoon cardamom
1/2 teaspoon salt
1/4 teaspoon nutmeg
3/4 cup light brown sugar
1/2 cup butter, at room temperature
2 large eggs
1 teaspoon pure vanilla extract
10-12 Italian prune plums or other purple plums
Juice of 1/2 lemon

Preheat the oven to 350 degrees. Lightly butter and flour a deep dish pie plate.

Put the flour, baking powder and spices in a bowl and whisk to combine.

Put the butter and sugar in a bowl and beat with an electric mixer until light and fluffy. Add the eggs and vanilla and beat until well combined.

Add the dry ingredients and beat on low until just combined. Spread the batter into the prepared pan.

Cut the plums in half lengthwise, remove the pits and quarter, again lengthwise. Put the plums in a bowl, sprinkle with lemon juice and toss to combine. Add a little sugar if the plums are particularly tart.

Arrange the plums skin side up in concentric circles on top of the batter. Bake for about 45 minutes or until a toothpick inserted in center comes out clean. Serve warm, plain or with a dollop of whipped cream or scoop of ice cream.

Columbus Day Weekend Special

fall_leaves_02Columbus Day Weekend is a busy time on Pleasant Lake. Stray beach toys and chairs are put away. Boats go under cover. Storm windows slide into place. Grills are tucked away. With a big sigh, we say a final goodbye to summer.

Even if it’s too chilly for a cookout, there’s no need for long faces and gloom. Bring the party inside. Invite a few friends in, light a fire in the fireplace and enjoy a relaxing evening.

Start with flavorful appetizers with a taste of the Mediterranean. Steamed and chilled artichoke leaves, broccoli and cauliflower will be delicious with Bagna Cauda, a warm dip with olive oil, anchovies and garlic. Add small bowls of Roasted Almonds and Spicy Olives, sit back and enjoy a glass of wine and each other’s company.

When you are ready to move to the table … a salad of Mixed Greens & Roasted Mushrooms is perfect for fall. Or maybe you’d prefer Roasted Beets with Goat Cheese?

Moving on to the main course, celebrate Columbus Day with a pasta dish from the sunny Mediterranean. Try my Lemon Pasta & Shrimp with Olives & Capers s bright and tangy. If you’re not quite ready to stow away the grill, you might enjoy my Grilled Swordfish with Olive & Caper Salsa. Both are great for entertaining and sure to please.

And for dessert? With all the wonderful, local apples available, how about a delicious Rustic Apple Tart or an Apple Crumb Cake? Don’t forget to finish the evening with tiny cups of espresso (decaf is okay) and maybe a shot of grappa!
